
Racconto 4 Bean Salad
Salad Ingredients:
- 1 can Racconto Cannellini beans, rinsed and drained
- 1 can Racconto Kidney beans, rinsed and drained
- 1 can Racconto Black beans, rinsed and drained
- 1 can Racconto Garbanzo beans, rinsed and drained
- 1/2 red onion, finely chopped (about 1/2 cup)
- 2 celery stalks, finely chopped (about 1 cup)
- 1 cup loosely packed, fresh, finely chopped flat-leaf parsley
For the Dressing:
- 1/3 cup Racconto Red Wine cider vinegar
- 1/4 cup sugar (more or less to taste)
- 4 tablespoons Racconto EVOO
- 1 1/2 teaspoons salt
- 1/4 teaspoon black pepper
Directions:
Simply mix all prepared ingredients and serve cold.
