
Cheesy Stuffed Mushrooms
Ingredients:
- 12 large white button – cleaned, stems removed
- 3 Tbsp butter
- 5 clove garlic – minced
- 1 cup Racconto Italian Seasoning bread crumbs
- 5 Tbsp Parmesan cheese
- 1 Tbsp fresh chopped parsley or 1 teaspoon dried
- 1 cup finely shredded cheddar cheese – or your preferred choice
- salt/pepper to taste
Directions:
Preheat oven to 325° F. Add the garlic and sauté until softened, being careful not to brown. Slowly add the bread crumbs, chopped mushrooms, parsley, salt, and pepper. Sauté until bread crumbs are slightly crisp and golden. Add the Parmesan cheese. Mix well. Remove from heat and allow to cool slightly. Spoon the bread crumb mixture into the mushroom caps, packing in firmly. Place on non-stick baking sheet and bake until mushrooms and filling is heated through, about 25 minutes. Approximately 5 minutes before mushrooms are done, sprinkle shredded cheese topping.
