
Left Over Pasta Frittata
Ingredients:
- 3 eggs
- left over pasta – 1lb
- Grated Parmesan – 1 cup
- 2 cloves chopped garlic
- parsley and salt/pepper to taste
Whisk egg with seasonings, then stir in pasta and Parmesan and mix well. Cook in a nonstick skillet on the stove until the edges are cooked, then transfer to the oven. Bake until set and then give it a golden crust by broiling it for a few minutes. Serve warm from the oven or at room temperature.
