Parmesan Crusted Chicken with Roasted Carrots
Ingredients:

Sliced carrots

1 Table spoon Racconto Extra Virgin Olive Oil

1 Table spoon honey

2 eggs

1 cup all purpose flower

2 cups Racconto Plain Panko Breadcrumbs
- 1/2 cup Racconto Grated Parmesan Cheese
- 4 Large Chicken Breasts
Preparation:
Add 1 TBSP of Racconto EVOO to a frying pan and add your thinly sliced carrots. Add 1 TSBP of honey, stir and cover on medium heat till soft. Remove lid and continue to let cook on low.
Meanwhile, Place your eggs, flour and Parmesan/breadcrumbs mix in three separate bowls.
Thinly slice chicken breast and flatten to 1/4″. Working one piece at a time. Dip into flour, egg and breadcrumb mix. Place into air fryer an oiled pan. Cook at 365° for 30 minutes and serve! Garnish with some Racconto Sun-Dried Tomato Pesto for a pop of flavor!
