Cacio e Pepe
Ingredients:
- 8oz Bucatini Racconto Pasta
- 3 TBSP Unsalted butter
- 1/4 Teaspoon of cracked black pepper
- 3oz Grated Parmesan Cheese
- 3oz grated Pecorino Cheese
Preparation:
Cook the pasta according to the package – reserving 1 cup of pasta water, drain the pasta. Set the pasta and cooking water to the side. In a large pan, melt 2 tbsp of the unsalted butter over medium heat. Add the cracked pepper and slightly toast. Add the 1 cup of pasta water and whisk well. Next, add the pasta and toss – add in the remaining 1 tbsp of butter and the cheese and toss together. Serve and top with more fresh cracked pepper and garnish with a sprinkle of cheese.
